Banana Nut Muffins!

One of my favorite things to have for breakfast are muffins. My husband and son love to snack on muffins for an afternoon snack after playing outside all day. I love having these on hand for my boys and my breakfast as often as possible. One of our absolute favorite kind of muffins are Banana Nut Muffins. So, I thought I would share with you all my recipe and hope you enjoy it!

Surprise, this is one of those recipes that I took the time to really measure out. One thing that I learned very quickly in my cooking journey is that when it comes to baking measuring is a very important element. So, without further delay, let’s get to baking shall we?


2 Cups All Purpose Flour

1 teaspoon baking soda

1/4 teaspoon salt

1/2 Cup butter, softened

3/4 cup brown sugar

2 eggs, beaten

2 1/3 cups mashed over ripped bananas

2 tablespoons of chai seeds

2 tablespoons of flax seed powder


Preheat oven to 350*F

Prepare your muffin tin. I just put my cupcake papers in each muffin spot.

In a large bowl, sift and mix flour, baking soda, salt, and flax seed powder.

In a separate bowl cream together butter and brown sugar.

Stir in eggs and mashed bananas until well blended.

Combine the wet and dry ingredients, topping off with mixing in the chai seeds.

Pour batter into each muffin tin, filling each space only 2/3 of the way full.

Bake in the over 65-70 minutes or until a toothpick when inserted into the center of the muffin comes out clean.

Let cool in the pan on the stove top for about ten minutes then turn out and enjoy!

This is definitely one of my favorite muffin recipes. I love how they are so moist and delicious. they are packed full of flavor and they have some really healthy ingredients. From time to time, I have been known to add a pinch or two of cinnamon for a little extra something.
