Roasted Potatoes and A Short Announcement!

This past weekend was so much fun. The husband took our little one to the backyard for a fun “guys” camping trip. The little one had so much fun, he was over the moon to be able to camp with his daddy. That meant that I got to have the whole house to myself for the night. I sprawled out on the couch and enjoyed a little snack while I watched some of my favorite YouTubers.

With my boys being out for the night, I also had a chance to do some meal planning. I don’t really care for meal prep, but one thing that I do love is meal planning. I take about an hour once a week, to go over what we will be eating over the next week. This helps me to make sure that I am having constant rotation of food and that I am not wasting money by having to throw out food. I have been doing this over the last few years and I have noticed a huge difference in how much our grocery bill is and how much of that goes to waste. I would strongly suggest doing that.

One of the recipes that hits the menu at least every other week is Roasted Potatoes. This is a great side dish that goes great with just about anything. I have several Roasted Potato Recipes, but I will be sharing only one with you today. Trust me, as I cook each recipe, it will definitely be put up on here for you to try as well! Let’s get roasting, shall we?


Potatoes (chopped in 1/2” or bite size pieces.)

Butter (melted, you will see why)



Garlic Powder

Onion Powder






Red Pepper flakes (optional)


Prep Work: Preheat oven to 450*F and put a piece of aluminum foil on your baking sheet and spray with cooking spray.

In a large mixing bowl, mix your salt, pepper, garlic powder, onion powder, parsley, basil, thyme, and rosemary. This should be mixed in the melted butter.

Rinse and dry your potatoes. Chop potatoes into bite size pieces.

Mix your seasoning mixture and the potatoes, making sure that the potatoes are evenly coated.

At this point, I let my potatoes marinate in the bowl for a few minutes to ensure that the flavor really gets into those potatoes.

Once they have had a chance to marinate, I layer them onto my baking sheet and put them in the oven. I cook them until the potatoes are nice and crispy on the outside. I flip them a couple of times throughout the cooking time. This helps promote that delicious crispiness.

At this point, I will usually have the rest of the meal cooked. Now, it is time to sit back and watch my boys enjoy their dinner. This is definitely a dish that I know Monkey will chow down on happily.
