Blueberry Delicious Recipes

Hi! My name is Alishia and I am a KraftaholicMommy!

The busy work schedules of our house, not to mention our extra curricular activities, some mornings you just don’t have time to do much for breakfast. So, I prefer to have a few things on hand to make a quick and nutritious meal to start Monkey’s day off right.

I love keeping fresh fruits on hand. Blueberries, Raspberries, bananas, and grapes. A great way to work fruits in our diets is adding them to delicious things. For example:

Blueberry Breakfast Yummy

Cottage Cheese

Rolled Oats

Chai Seeds

Almond Slivers

Flax Seeds

I simply mix all of this together. This is a quick and easy breakfast that gives a good start to the morning.

I love having wheat bread on hand. Near my neck of the woods is a very nice little store that sells organic wheat bread. So, on those mornings that unbelievably swamped and short on time, Monkey loves getting a piece of toast and some delicious fruit on the side.

One more thing that I try to have on hand, baked goods. A couple times of week, I make a point to bake up some goodies that are great for a grab and go breakfast. One of the recipes I would love to talk about today is Blueberry Muffins.

Almond Flour

Baking powder

Canola Oil

Lemon Zest

Lemon juice

Flax Seeds

Rolled Oats

I simply mix my dry ingredients in one bowl.

I mix my wet ingredients in another.

I bring all of those ingredients together. Then, I fold in my blueberries.

I portion the batter out in my muffin tin.

In a preheated, 400*F oven, I bake the muffins for about 20-25 minutes (until the tops are golden brown and domed.)

This recipe is one that when I make it, it goes quickly. Not only are my boys chowing down on it for breakfast, they are snacking on them. I do not put a lot of sugar, most recipes I have seen call for half a cup to nearly two cups. Now, sometimes, I do honey instead of sugar. With my little man, who is allergic to artificial sweeteners, he has to have as organic as possible treats. These muffins are delicious.

I hope you enjoyed today’s post. If you did, please give this a like, comment, and share so others can join the fun as well. Also, let me know in the comments your favorite quick breakfast recipes, I would love to know! Thank you so much for your time and support! Until next time,

Thank you!

God Bless!

Happy Krafting!
