How are we all doing today? It is such a beautiful day to be outside. Here in my neck of the woods we have a beautiful breeze and the temperature is perfect! God is really showing me some wonderful weather today. I am very thankful for that considering most of my days this week involves me spending just about every waking moment outside. I have my yarn, this wonderful iPad, and my keyboard. To top all of that off with you guys and I am one happy camper.
When it comes to my little man, food is an interesting thing. He tends to only really eat vegetables. When it comes to his vegetables, he wants as much flavor as possible and he does not care for anything canned. So, by my own admission, I have spoiled my child slap rotten. One thing Monkey really loves, green beans. More specifically, bacon green beans.
Fresh Green Beans
Bacon, cooked and Chopped (save a tiny bit of that bacon grease)
Fill a large pot with water and bring to a boil.
While that is coming to a boil, snip the ends and wash your beans.
Once the water is boiling, add a pinch of salt to the water and add the green beans. I love blanching my fresh veggies before cooking, it just does something to the texture and color. I usually only boil my green beans for about a minute, then I strain them.
In the same skillet that you cooked your bacon, add that little bit of bacon grease and a bit of butter.
Once those ingredients have had a chance to melt and start to bubble a bit, add the garlic. Allow that garlic to get fragrant as they say. Be careful not to burn your garlic.
Add your green beans and the bacon to the skillet and cook your green beans to your preferred doneness.
I like to finish off with a bit of pepper and these bad boys are ready for munching.
This recipe is very simple and very quick to make. I loved making this for family get together and pot lucks. I can make a pretty large batch in no time and I always come home with an empty dish.
Just like many of you, life gets busy and it is always nice to have a fresh go to side dish that can elevate a simple oven roasted chicken. I really love this recipe and it is awesome that it’s a favorite of a picky munchkin.
