This year has already been interesting in the sense that I have been basically flying by the seat of my britches and that is including in the kitchen. The other night, my little man and I had a bit of an interesting dinner. I thought I would share with you our chicken recipe from last night.
Two Chicken Breasts (I used boneless skinless)
Rosemary (I used Dried)
Lemon juice (Fresh squeezed is my favorite)
I thawed my chicken breasts earlier in the day and pat them dry with a paper towel.
In a small bowl I mixed all of the seasonings except the salt and pepper.
I coated the chicken breasts as evenly as possible with the seasoning mix and squeezed some of the lemon juice on top. I marinated the chicken, the refrigerator, for about three hours before cooking.
I heat a pan over medium high heat and put a bit of olive oil in the pan. Once the oil was nice and hot, I dropped my chicken in the pan top side down. I cooked each side about 5 minutes per side. My chicken breasts were not all that thick, because I did whack them a couple of times with the meat mallet. Once my chicken temperature was 165F, I took my chicken out of the pan, put the tiniest amount of salt and pepper on top and covered with aluminum foil to rest for about five minutes.
I sliced the chicken and added one more squeeze of lemon on top and it was then time to enjoy that dish.
It was actually pretty good and my munchkin ate every bite. He loves chicken and he loves lemon, so this dish was really a hit with him.
This is definitely a dish that I will be making again in the future and hopefully the husband will enjoy it as much as Monkey and I.
