Super Sweet Taters

What a beautiful week this is turning into! I am loving that Sunday’s blast of frozen fun has lifted a little bit today and I can actually sit on my back patio and enjoy that Florida sunshine. Seeing God’s creations, always inspires me to create as well.

Today is going to be a super simple and super easy recipe. This is a little recipe that I wanted to try, I was wanting to use cinnamon and I had some amazing sweet potatoes on hand, so I thought I would try and make something other than sweet potato casserole.

Before I give the ingredients list, my Mama is a Southern Lady and my dad’s side of the family are mostly Italians, so when you see the ingredients list, there will be no measurements. When a recipe is made in our family, the measurements are pretty much whatever feels or tastes good to you. For example, this recipe calls for Terragon, I love the stuff, you may not like too much of it, add as much or as little as you want.

Sweet Potatoes (chopped in half inch pieces)

Olive Oil

Cooking Spray


Ground Cinnamon



Preheat over to 375 degrees F

Chop Sweet Potatoes

In large bowl, mix together olive oil, Terragon, ground cinnamon, and the salt and pepper.

Add sweet potato pieces and mix well

Spray baking pan with cooking spray so nothing sticks

Bake 40-55 minutes or until crispy outside, soft in center.

I wanted sweet potatoes, but I didn’t want all of the fat that butter has. I also didn’t want a ton of sugar or syrup. I started sniffing different spices and then sniffing the sweet potatoes and landed on these spices. I hope you give these a try.
